I'm always looking for new Anime to watch, but it can be hard to know where to begin. I've seen most of what's considered a must-watch, and I'll list what I can remember off-hand:

-Samurai Champloo
-Soul Eater
-Neon Genesis Evangelion

Movies
-Ghost in the Shell 1 and 2
-Sword of the Stranger
-Most of Miyazaki's work
-Much of Studio Gibli's works

FMA: Brotherhood would probably have to be my favorite.

My favorite anime is without any doubt Fullmetal Alchemist: Brotherhood. Here is my top 5:

1st - Fullmetal Alchemist: Brotherhood
2nd - Fullmetal Alchemist
3rd - One Piece
4th - Mahou Shoujo Madoka★Magica
5th - Code Geass: Hangyaku no Lelouch R2

All of them are amazing. If you didn't one of them, go watch it.

Code Geass, Steins;Gate, and Tengen Toppa Gurren Lagann are among my favorite ones. Awesome plot, nice graphic, great soundtracks. Must watch!
